Creamy sweet potato & cauliflower soup

4 to 6 servings
Quick, easy, delicious

In large pot, sauté until tender::

- 1 1/2 tsp. OLIVE OIL
- 1 cup chopped yellow ONIONS

Add, and cook for 1 minute:

- 3.5 cups SWEET POTATO, peeled and chopped in medium size chunks
     (= approx. 1 med.-large potato)
- 2 tsp. ground CUMIN
- 3/4 tsp. ground CORIANDER
- 3/4 tsp. ground FENNEL
- pinch of CAYENNE (= approx. 1/16 tsp.)

Add, bring to a simmer, covered (and cook for about 20 min. or until vegetables are very tender):

- 3 cups CAULIFLOWER, roughly chopped (= approx. 1/2 head of cauliflower)
- 3.5 cups veg. broth

In blender, purée until smooth.

Return to pot (to reheat), and add:

- 2 tsp. fresh LEMON JUICE
